How to climb-up on a slope while riding motorcycle?

No to shifting. Experience will tell you what gear you need to be in. You need to approach the slope at the highest speed that is safe and keep the bike from bogging while climbing. If it bogs, you're in too high a gear and will have to try again. Shifting while on the slope will just slow you down and you'll wipe out.
